3 quick and healthy dinner recipes to get you summer ready!

not many people jump for joy when they read healthy recipes that involve loads of cooking. in facts 6/10 americans prefer take out, fast food, doordash or meal prep services instead of cooking. but guess what … summer is coming in hot and i’ve created a cheat sheet to some of the most delicious, filling, healthy and easy recipes for you to enjoy on repeat! here are my top 3 faves!

high protein alfredo

this recipe is too good to be true! with over 30g of protein per serving and loads of flavor, i know this will be a total hit in your house! This sauce keeps well jared in the fridge for up to 5 weeks so it’s great to have on hand for easy dinner plans! my secret ingredient is cottage cheese. i promise you won’t taste it! blended cottage cheese has a similar consistency and taste to mozzarella cheese and does a great job in this alfredo sauce!

Ingredients:
1 tsp Basil, dried
1/4 tsp Garlic powder
1 tsp Oregano, dried
1 tbsp Parsley, fresh or dried
1 tbsp Cornstarch
1/8 tsp Pepper
1/4 tsp Salt
1/2 cup Cottage cheese
1 cup Milk
1/2 cup Parmesan cheese, grated

instructions:
blend everything in a blender or food processor.
heat sauce in a pan to cook the cornstarch and thicken the sauce.
add your past of choice and enjoy!
*for extra protein use a high protein pasta like chickpea or quinoa

stuffed baked potatoes

anything that involves a potato … sign me up for it!!! This mean is so simple and you can customize it however you prefer! meats, cheeses and endless topping options, this one will be a fun one for the whole family!

ingredients:
4 baked potatoes or sweet potatoes (cook in the oven or microwave)
1 pound ground beef, turkey, chicken or pork
1 tbsp olive oil
1/2 tsp salt
1/4 pepper
1 tsp italian seasoning
1/2 tbsp minced garlic
1/2 tbsp onion powder
*brown meat and all the above seasonings with your oil in a pan

toppings:
greek yogurt or sour cream
shredded cheese
pickled jalapenos
chopped tomatoes or salsa
green onions
ranch dressing
BBq sauce
hot sauce
*literally anything you want … add it!

assemble your stuffed potato:

cut a slit in the baked potato but don’t cut all the way through.
add your ground meat.
add any toppings you want.
enjoy!

Chorizo Tacos

these are not only for taco tuesday! enjoy this mean with little to no time to prepare! i love taco recipes because of how much flavor and how little time it takes to prepare. i love using shortcuts like store bought salsas, taco seasonings and guacamoles. it make less time in the kitchen cooking and more time enjoying a yummy meal!

ingredients:
1 pound ground chorizo
1 taco seasoning packet - your choice!
corn or flour tortillas - i like to small street tortillas for this recipe
half a chopped onion
fresh chopped cilantro
salsa verde
1 fresh lime - cut in quarters

optional:
guac
sour cream or greek yogurt
shredded cheese

instructions:
brown your meat with the taco seasoning packet.
toast your tortillas in a fry pan.

assemble your taco:
take a toasted tortilla and add some of the browned chorizo meat.
top with onion, cilantro, salsa verde and some fresh squeezed lime juice.
if you’re feeling fancy feel free to add guac, sour cream and or shredded cheese.
